For those who build card or paper terrain, what should I look for in a printer? What printer do you use?

It depends on what you plan to print the terrain on. If you're going to print and glue it to plastic stock then just any good printer will do. If you're going to use cardstock or thicker I'd consider a printer that loads paper from the back because the cardstock will make a pass through the printer, not a 180 like it does on most other printers. I'm currently using a HP D2660 (a 180 paper pass) and the cardstock occasionally has to be nudged for the printer to take it. I've also had the cardstock jam. Good luck.
